Abstract
In the first part, this report provides an overview of the existing body of academic knowledge regarding innovation in service design, business processes and business models in travel, tourism, and hospitality. It is based on an international literature review (2023) and thus rather theoretical. This provides the basis for subsequent empirical and conceptual work on the topic of this project. In the second part, this report includes an empirical overview (2024) of concepts such as business processes, business models, and business ecosystems, with a spotlight on the Swiss tourism sector. In the third part, the project report includes conceptual work (2025) on digitally supported services and business models in tourism and hospitality in Switzerland. It provides an overview of the project’s outcomes and refers to further output of the different work packages of the Innosuisse flagship 'resilient tourism' (subproject two).

Im ersten Teil bietet dieser Bericht einen Überblick über den bestehenden Stand der wissenschaftlichen Erkenntnisse zu Innovationen im Bereich Dienstleistungsdesign, Geschäftsprozesse und Geschäftsmodelle in den Bereichen Reisen, Tourismus und Gastgewerbe. Er basiert auf einer internationalen Literaturrecherche (2023) und ist daher eher theoretisch ausgerichtet. Dies bildet die Grundlage für die anschliessende empirische und konzeptionelle Arbeit zum Thema dieses Projekts. Im zweiten Teil enthält dieser Bericht einen empirischen Überblick (2024) über Konzepte wie Geschäftsprozesse, Geschäftsmodelle und Geschäftsökosysteme, wobei der Schwerpunkt auf der Schweizer Tourismusbranche liegt. Im dritten Teil enthält der Projektbericht konzeptionelle Arbeiten (2025) zu digital unterstützten Dienstleistungen und Geschäftsmodellen im Tourismus und im Gastgewerbe in der Schweiz. Er bietet einen Überblick über die Projektergebnisse und verweist auf weitere Ergebnisse der verschiedenen Arbeitspakete des Innosuisse Flagship 'Resilient Tourism' (Subprojekt zwei).

Dans sa première partie, ce rapport offre un aperçu de l'état actuel des connaissances scientifiques en matière d'innovations dans les domaines de la conception des services, des processus métier et des modèles économiques dans les secteurs du voyage, du tourisme et de l'hôtellerie-restauration. Il s'appuie sur une revue de la littérature internationale (2023) et revêt donc un caractère plutôt théorique. Il constitue la base des travaux empiriques et conceptuels qui suivront dans le cadre de ce projet. Dans la deuxième partie, ce rapport présente une synthèse empirique (2024) de concepts tels que les processus métier, les modèles économiques et les écosystèmes d'entreprise, en mettant l'accent sur le secteur touristique suisse. Dans la troisième partie, le rapport de projet présente des travaux conceptuels (2025) sur les services et modèles économiques assistés par le numérique dans le tourisme et l’hôtellerie-restauration en Suisse. Il offre un aperçu des résultats du projet et renvoie à d’autres résultats issus des différents lots de travail du projet flagship «Resilient Tourism» d’Innosuisse (sous-projet deux).
